What We Eat: Roasted Kielbasa and Roasted Vegetable Packet Dinner

Sometimes I get in a blogging rut. I mean, I love sharing with you and I love getting to know all of you…but sometimes I find myself without any recipes because, well, what we eat doesn’t always need a recipe!

I guess that happens when you move over to clean eating. Really, once you get into the swing of things, very few of your meals require any special recipe…just a little of this, a little of that, some garlic, salt and pepper, you’re good to go!

Then it struck me…so many people get stuck with their meals that even if they have a beautiful new dish just waiting to be put together at home, they won’t recognize it! 

Given the success of my annual Healthy Lunchbox Series, I thought I would do something new…

The “What We Eat” series will reflect what my family actually eats…

And you’ll see, often times the best meals come with just a little of this, a little of that.

You can totally do this, too!

Tonight’s meal came to be for a number of reasons… first, when I went to the store with my son earlier today, we happened upon some nitrate free, uncured kielbasa.

Awesome, right!?!

These were mini kielbasa (about the size of a large hotdog) and since my girls are all out of town, I grabbed enough for the remaining 4 people in my house to each have two, if they wanted it (more like 1 for me, 1 for my husband and 3 for each of our teenage boys…but whatev).  

I figured we would grill that, cook up some vegetables, serve it with some homemade sauerkraut and some spicy mustard and we’d be good.

Only, I forgot that my brother in law was due to be back in town and was bringing my three nephews over for the night as well.

So my meal planned for 4 quickly needed to become a meal for 8 (4 of whom are teenagers. BOY teenagers).

Taking a look in my fridge, I surmised that I had three beautiful squashes (two giant zucchini and one lovely yellow squash) left from the gift brought to me by a neighbor earlier in the week (nothing better than homegrown!), lots of carrots in all kinds of colors, throw in the big, beautiful onions my brother in law brought me from my father in laws house, top it with some garlic, salt and pepper…I knew we had a meal!

To take the labor out of this meal, I simply created a giant foil packet, lined it with some parchment paper, chopped everything into big chunks and roasted it in the oven for about 20 minutes or until everything became tender and the sausage was cooked through.

The flavors were amazing, everyone ate their vegetables and the fact that there was only enough for one small sausage per person didn’t matter to those hungry teens.

This is how we really eat!

Ingredients
  1. 8 small uncured kielbasa sausages (about 20 ounces)
  2. 2 large zucchini squash
  3. 1 large yellow squash
  4. 1 large yellow onion
  5. 1 large red onion
  6. 3 cloves garlic, minced
  7. olive oil drizzle
  8. salt and pepper to taste
Instructions
  1. Preheat oven or grill to 375f. Prepare foil packet by lining a 9x13 pan with aluminum foil, overlapping and folding equally long parts of the foil together. Line the foil with parchment paper and set aside.
  2. Chop kielbasa, zucchini, yellow squash and onion into large bite-sized pieces. Drizzle with olive oil then toss ingredients together with minced garlic, salt and pepper.
  3. Cover with parchment paper then bring the aluminum foil around, folding tight to ensure complete seal. Roast at 375 for 20 minutes or until tender.
  4. Enjoy!
  5. Serves approximately 8 people.

  1. Totally true about making meals that don’t require a recipe! That’s definitely the case most of the time at our house and this post is a great reminder that it doesn’t take much to actually “cook” meals. So many are afraid of cooking. Anyway, this meal looks delish, Sunny! Sharing …
