Alfredo Sauce (Gluten Free, Dairy Free, Paleo)

 

It may come as a surprise to some of you, but even though all of my recipes shared on this page are 100% gluten and dairy free, except for my children who are sensitive or allergic to dairy, we actually have a few dairy eaters in this house.

And every now and then I get to splurge, too…

So, on a rare night when my dairy free children were all out of the house, I decided that I wanted to splurge, and to splurge big.

And off to the store I went. Heavy cream, butter, real Parmesan cheese, fresh cream cheese…. oh my, was it decadent!! 

Then my oldest daughter gave it a taste. Savoring every moment, her eyes rolled back in her head and she let out and audible, “mmmmmmmm,” followed by a somewhat unexpected,

“Momma, this is soooo goood, but you know, your ‘regular’ alfredo doesn’t really taste any different. I really love your alfredo!” 

Seriously? 

If she only knew how different these two recipes are…how healthy my ‘regular’ alfredo is! 

Even so, I must agree with her….they both are doggone delicious! 

Since then I have shared this recipe with a handful of friends, all with raving reviews, even from the most dairy-loving picky eating children! 

Seriously, this is that good!

And why it has taken me so long to share this decadence with you, I am not completely sure. Regardless, I am happy to be sharing it with you today!

Ingredients
  1. 1 head of cauliflower
  2. 1-14.5 oz can of coconut cream
  3. 3/4 c Nutritional Yeast
  4. 2 tsp garlic powder
  5. 2 tsp onion powder
  6. 1 tsp Tahini paste
  7. 1 tsp lemon juice
  8. 1/2 tsp Italian seasoning
  9. 1/4-1/2 tsp red pepper flakes
  10. Salt and Pepper to taste
Instructions
  1. There are two ways to prepare this sauce. My favorite is in my VitaMix, although I realize this isn't an option for everyone, so I will share both ways below!
  2. Prepare cauliflower by cutting florets and steaming until fork tender.
  3. Vitamix: Add all ingredients to Vitamix. Slowly increase speed form 1 to 10, then set to Max Power. Allow to continue until steam comes from the top of the container.
  4. Stovetop: Cook all ingredients together until slow boil is achieved. Carefully use hand blender to achieve optimal texture.
  5. Add salt and pepper to taste.
  6. Serve over zucchini, squash or spaghetti squash, or choose your favorite gluten free pasta to pair it with and enjoy!
