There are some foods that have been such a long staple in our home (both my husband and I having enjoyed them since our own childhood), we forget that not everyone has tried them just yet!
Recently, we had a sweet visitor who is not native to our country. When we have guests, I do all I can to make easy to serve meals that can easily be individualized based on needs…that night, we chose to have Taco Salad. After preparing her plate, she looked at me and asked if she could have our recipe as she had never had anything like this dinner before…
What?
Y’all…despite the name “Taco” being included in this delicious salad recipe, this meal is 100% American, originating in Texas back in the 1960s. I have met many people who have no idea what a “Taco Salad,” is or why one would want to eat it…
Really? It’s a healthier option to just eating tacos straight up, so long as it is prepared in a healthier way. And that is what I aim to share with you tonight.
Mix and match toppings as you see fit. Keep it Keto friendly by omitting the chips. If you eat dairy, feel free to add some shredded cheese and sour cream, although I bet you’ll find that the Cilantro-Lime Ranch Dressing is creamy enough that you’ll never miss all that extra stuff!

- Prepare salad station by putting each of your chosen toppings onto separate plates/in separate serving bowls. We like to order them by chips (if using), salad greens, taco meat, chosen vegetables, then saving the avocado/guacamole and Cilantro Lime Ranch Vegetable Dip for the end of the line so that guests can top their salad with something creamy and delicious.
- Have fun mixing and matching to find your perfect salad combination!
