We don’t eat a lot of grains. To keep toxins down and reduce inflammation, on the occasion that we do eat grains, we do all we can to keep them organic and enjoy them in the healthiest way possible.
That being said, we love Mexican food.
Having grown up just north of the Tijuana/California border, I have been blessed to know some of the most authentic and delicious Mexican food around.
With that, Mexican Street Corn (Elote) is a naturally gluten-free treat that my whole family enjoys.
But, when you have a child who can no longer have gluten, dairy or corn…enjoying something like Elote seems out of reach.
Then one day I was inspired to put together something just for her.
I mean, we use cauliflower for just about everything, right? Since the vegetable cooks well and blends with almost any flavor, we have used it for everything from twice baked “potatoes” to “rice” to keto friendly stuffing!
Is there anything cauliflower can’t do?
Well, maybe…
But seriously…on a whim, I decided to turn some of my Super Easy Cauliflower Rice into a dish that would resemble Elote en Vaso (Corn in a Cup) and voila! My kids are in love!!!
Just in time for your Cinco de Mayo celebration, this Paleo “Elote” pairs perfectly with your favorite carnita, grain-free tamale (pasteles), or just about any flavor that takes you south of the border this beautiful holiday weekend!

Paleo “Elote” (Mexican Street Corn Alternative)
Ingredients
- 1 batch Super Easy Cauliflower Rice
- 2 TBS olive oil
- 1/2 c Mayonnaise (we use Melissa Joulwan’s Homemade Paleo Olive Oil Mayo
- 1/8 c lime juice (plus more to taste)
- 1/4 c cilantro, chopped (plus more to taste)
- 2 TBS Nutritional Yeast
- Salt and Peper to taste
- Chili powder or cayenne, to taste
Instructions
- Prepare your Super Easy Cauliflower Rice, removing from heat. To the saucepan, add in olive oil, mayonnaise, and lime juice. Fold in well until completely incorporated. Fold in cilantro, and nutritional yeast. Add in salt and pepper, along with more lime juice/cilantro according to your taste. Divide onto 4 serving plates and top with chili powder or cayenne, depending on the heat level you desire (I prefer cayenne, my kids mostly prefer chili powder). Serve and enjoy!
Super creative! I’ll have to try this! I make a cauliflower potato salad…it it is seriously AMAZING too! Such a versatile veggie!
