School is back in session and we as parents want our kids to have healthy snacks. Not only do they need snacks but they have to be nut free. This can get difficult if your child has food allergies. There is no reason for your child to only have an apple for snack. Don’t get me wrong. I love apples and enjoy them almost every day. Unfortunately, we can’t live on apples alone. This bar tastes great and is filled with delicious ingredients that will help keep your child full of energy throughout the day.
No-Bake Nut Free Energy Bars
1 ½ c. dates
1/3 c. coconut oil
1 tsp. vanilla
1 c. unsweetened coconut
½ c. ground flax
½ c. hemp hearts
2 tsp. ground cinnamon
½ tsp. sea salt
Toppings- chocolate chips, melted chocolate, coconut, etc.
Soak dates in boiling water for ten minutes. Drain. Add dates, coconut oil and vanilla to food processor and pulse until smooth. Add remaining ingredients, and pulse until fully mixed.
Press mixture into glass 9”x 9” pan and keep plain or top with coconut or melted chocolate. Let cool in the fridge until hardened. Cut into 32 bars. Keep refrigerated. Freezes well.
Another nut-free option–great! I can never have enough energy bar recipes. 😉
