A huge thanks to Sunny for asking me to participate in the Lunchbox Series! Today I am sharing a special glutenfree, dairyfree and nutfree lunch. In our house we are always packing lunches and snacks, even when its not school time. Living with food allergies has forced us to get creative and prepare ahead of time for all our eating needs.
We use Planetbox stainless steel lunch boxes. They have plenty of room for my hungry boys, ages 4 and 6 as well as lots of room for myself! The sections of the box allow us to eat foods in correct portion as well as variety!
Today I am sharing our Vegan Unchicken Salad recipe. I used to be a meat eater but I am now vegetarian. I used to loved to eat chicken salad. This recipe is very easy, lasts all week and gives me some of that “comfort food” feeling! In addition to the Vegan Unchicken Salad served over fresh greens, we have paired it with some Way Better Snacks gluten free chips, carrots and tomatoes, a fruit salad and some Enjoy Life dairy free mega chocolate chunks for a bit of sweetness!
Ingredients
- 1 can of garbanzo beans, rinsed and drained
- 3/4 cup of mayo (vegan)
- 2 celery stalks, diced
- 1/4 c bread and butter pickles, diced
- 1/4 c red onion, diced
Directions
Mix all ingredients together and chill for at least 1 hour before serving. ENJOY!
