Fresh Watermelon, Cucumber and Tomato Salad

The last couple of months have been crazy…between listing our house for sale, thereby restricting my time in the kitchen because everything has to be perfect for showings; to up and moving my family across the state, it’s been difficult to sit down and recipe develop/write the way I wish to do!

My husband and I are firm believers in the idea that children will learn best by doing. All of our children have had age appropriate chores from the time they could walk, so when I had an ah-ha moment about adding a cooking chore to their list, I knew we had to run with it.

Of our five children, only two of them have actively sought out regular time in the kitchen with mom. I knew forcing the other three to get in there with me would be worthwhile and open their eyes to how simple cooking and creating can be!

So now, every Sunday we sit together and menu plan as a family. It has been a relatively short time since we began this process, but I love it because it takes a lot of the worry off my shoulders and encourages them to think outside of the box on what they want to learn. 

Last week, while my husband and I took our boys out for their birthday, my 12 year old had the chore of preparing dinner for her and her sisters. 

Planning ahead, her main course had already been finished in the crockpot. 

But I left her to complete her salad for herself. 

Fortunately, she is one of my cooking kids. 

While she had come across a recipe that was her inspiration for this salad, she had lost the recipe sometime between when she told me what I needed to buy and actually making her dinner. So she did what any good cook would do…

She decided to wing it!

The result?

A salad her sisters raved about! Even though we purchased enough ingredients to feed all 7 of us, the 3 of them ate then entire salad, all on their own.

So this week, as we sat down to plan our meals, her older sister asked if she could learn how to make oven fried chicken and told me she wanted to make the watermelon salad from the week before. 

With that, I knew I had to share this simple but delicious recipe with you!

I would love to take credit for this recipe, but really, it was my daughter’s doing.

Ingredients
  1. 1 mini, seedless watermelon, diced
  2. 1 large english cucumber, sliced or diced
  3. about 20 heirloom cherry tomatoes, sliced in half
  4. 1 medium red onion, thinly sliced
  5. Juice of 1 lemon
  6. salt and pepper to taste
Instructions
  1. In large bowl, mix together watermelon, cucumber, tomatoes and onion. Squeeze fresh lemon juice over the salad and sprinkle with salt and pepper to taste. Toss and and refrigerate for 20-40min before serving.
  2. Enjoy!
