Strawberry Topped Boston Cream Pie (Gluten-Free, Dairy-Free, Nut-Free, Paleo)

It might surprise you to learn that my husband and I don’t celebrate Valentine’s Day.

Nope. Never. Not once.

You see, my husband has this thing against a commercially exploited day supposedly designed to tell the person you love that you love them. He believes that love is something to be expressed on a daily basis, that one should surprise and spoil randomly and not have to have a designated day to express love.

Luckily, he follows through this belief in his actions. And even though I do know without a doubt that he loves me; and while I understand where he is coming from, the girl inside of me still wants to be pampered with roses, sweet surprises, dinner dates and all the other things you dream of when Valentine’s is around the corner.

So when we were deciding on the perfect day to schedule our wedding, there seemed to be two main options; 1. Either we get married on my mother’s birthday, February 13th and he could spoil me that day so I’d never feel a loss on Valentine’s or, 2. We get married in March and we do Valentine’s like all of the other couples we know.

Needless to say, he opted for option #1. Given that he asked me to marry him on his mother’s birthday (her suggestion), it seemed only fitting to be wedded on the day of my mother’s birth.

So in this week filled with love, sweets for your sweet, happy memories and wonderful surprises; we still have plenty of excuses to celebrate…even if we don’t do Valentine’s Day.

This year, my surprise treat for my husband came in the form of one of his favorite gluten and dairy-filled desserts…only, true to my nature, this one is Paleorific.

Boston Cream Pie comes in many ways, topped with a chocolate glaze or ganache, simply sprinkled with powder sugar, and on a more rare occasion, topped with strawberries and frosting.

My husband’s favorite? The latter, more complicated recipe…but the end result is worth every second.

The added drizzle of chocolate sends this cake up over the top, and the leftover ganache can be used to cover any leftover strawberries for you to enjoy separately. Or together. Whichever you prefer. ;)

Most of this cake can be made up to two days ahead of time, although I recommend making the ganache on the day of.

I know this recipe is up too late for your Valentine’s Day celebration, but why not extend your joy and give this to the one you love this weekend. Or next week, or anytime. Just because. I mean, really, doesn’t the one you love deserve a sweet surprise…Valentine’s Day or not? ;)

Strawberry Topped Boston Cream Pie (Gluten-Free, Dairy-Free, Nut-Free, Paleo)

Ingredients

    Cake
  • 1 c coconut flour
  • ½ tsp baking soda
  • ½ tsp sea salt
  • 8 eggs
  • 2/3 c coconut oil
  • ½ c honey or palm syrup
  • 4 Tbs vanilla extract
  • Pastry Cream Filling
  • 2 cups whole-fat canned coconut milk
  • 2 Tbs vanilla extract
  • 6 egg yolks
  • 2/3 c palm or turbinado sugar
  • ¼ c arrowroot powder
  • 1 Tbs coconut oil
  • Glazed Strawberries
  • 1 lb ripe strawberries, hulled
  • ½ c palm or turbinado sugar
  • 4 ½ tsp arrowroot powder
  • ¼ c cold water
  • 1 tbs coconut oil
  • 2 tsp lemon juice
  • Vanilla Frosting
  • 2 cups arrowroot powder
  • 2 cups palm or turbinado sugar
  • ½ c palm oil shortening
  • ¼ c whole-fat canned coconut milk
  • ½ tsp vanilla extract
  • Chocolate Ganache
  • 4 oz dairy-free chocolates (I use Enjoy Life brand)
  • ¼ c whole-fat canned coconut milk

Instructions

  1. Preheat oven to 350f.
  2. Grease and flour two 9-inch cake pans, set aside.
  3. Prepare cake by mixing together coconut flour, baking soda and ¼ tsp sea salt in medium sized mixing bowl. Set aside. Using stand or hand mixer, beat 8 eggs until fluffy then mix in remaining coconut oil, palm syrup and vanilla extract. Mix in dry ingredients and blend until no lumps remain. Pour ½ cake mixture into each prepared cake pan and bake for 20-25 minutes or until a toothpick inserted in the center of the cake comes out clean. Allow to cool 10-15 minutes before removing cakes from pan. Refrigerate up to 48 hours until ready to build cake.
  4. In medium sauce pan, prepare pastry cream filling by bringing 2 cups of whole-fat canned coconut milk to a boil over medium heat, set aside. Whip together egg yolks, palm or turbinado sugar and arrowroot powder until light and fluffy. Slowly add in ½ cup hot milk and whip for approximately 60 seconds before mixing in the remainder of the milk. Return egg and milk mixture to saucepan. Add in coconut oil and cook over medium heat, whisking continuously until thick. Remove from heat and cover. Refrigerate at least two hours until ready to build cake.
  5. Prepare glazed strawberries by mixing palm or turbinado sugar, arrowroot powder and cold water together. In medium sauce pan, bring sugar mixture to a light boil over medium heat and add in coconut oil and lemon juice. Quickly add in hulled strawberries and continue to cook, stirring gently to not smash the strawberries, until sauce becomes thick. Remove from heat and allow to cook. Use immediately or refrigerate up to 24 hours until ready to use.
  6. Prepare frosting by mixing together arrowroot powder and palm or turbinado sugar until powdered sugar texture has been achieved. Set aside. Using an electric or stand mixer, cream palm shortening until smooth and creamy, 2 to 3 minutes. With mixer on low speed, add in 3 cups or sugar, milk and vanilla, mixing until light and fluffy. If necessary, slowly add in remaining cup of powdered sugar until you have achieved your desired consistency. Refrigerate up to 48 hours, removing at least two hours before you are ready to build your cake.
  7. Once you are ready to put your cake together, prepare ganache in medium sauce pan by melting semi-sweet chocolates and ¼ c whole-fat coconut milk over medium-low heat, mixing continually until chocolates are completely melted. Set aside.
  8. Build your cake by placing one layer of cake on to serving platter. Spread pastry cream evenly over the first layer then carefully place the second layer of cake over pastry cream, pressing gently to ensure cake is level. Gently clean off sides, removing any pastry cream that has seeped out during the preparation process. Leaving about a ½ inch gap along the edge, arrange strawberries in one large circle first, filling in the center with the remaining strawberries and spreading any remaining glaze evenly over the strawberries.
  9. Fill in the remaining gap along the top edge of the cake with frosting by preparing piping bag with a coupler and a large closed star, open star or french tip. Fill with frosting and decorate as desired.
  10. Carefully drizzle ganache over the cake, creating a zig-zag or checkered pattern. Use as much or as little of the ganache as you please for this step. I ended up using approximately 3/4th the prepared ganache and used the remaining sauce to cover leftover strawberries which we enjoyed at a later time.
  11. Refrigerate until ready to serve.
  12. Makes approximately 8-10 servings

Sweet Potato Hasselbeck Potatoes

If you follow me on Facebook, Instagram or Twitter, undoubtedly you have seen some of the photos of the lovely meals my family and I have been enjoying recently.

Funny thing? In addition to our usual grain-free and dairy-free fare; every meal I have made and every meal I have photographed over the last five days has also been free of eggs, nightshades, nuts, seeds, legumes and sugar.

I know that in my previous life my first thought would have been “what are you eating then?”

My answer today? Food! Real food. Really, really good food!

Among the things I have made recently, one of the items my family has been most excited about was also one of the more simple sides I have made.

These Sweet Potato Hasselbeck Potatoes are not only visually appeasing, they are soft in the middle have just the slighted crunch on the edge.

Mix and match your seasonings to match the flavor of your meal couplings. With so many options, these will undoubtedly become your favorite potatoes as well.

Sweet Potato Hasselbeck Potatoes

Ingredients

  • 8 small sweet potatoes
  • 5 Tbs coconut oil, melted
  • 2 tsp garlic
  • 1 tsp salt
  • 1 tsp thyme
  • 1 tsp oregano

Instructions

  1. Preheat oven to 450f. Oil a large shallow glass baking dish.
  2. Peel potatoes and place each on a cutting board. If there is trouble getting potatoes to sit still, cut a ¼ inch slice from the bottom of the potato to help the potato lie flat and not roll, and discard the slice.
  3. Using a very sharp knife, slice each potato crosswise, making ¼ in apart slices and cutting down vertically. Be careful not to slice too deeply, stop slicing approximately ¼ inch above the bottom of the potato.
  4. Run each potato under cold water and flex gently to allow the fans to open.
  5. Carefully brush each potato with melted coconut oil, ensuring some of the oil gets into each crack. Place the potatoes in an oiled baking dish, sprinkle with garlic, salt, thyme and oregano, cover with aluminum foil and bake for 30 minutes. Remove foil and bake an addition 15-20 minutes or until the potatoes turn lightly golden and crispy on the outside with a soft flesh on the inside. Serve warm.
  6. Makes 8 Servings

Paleo Garlic Cheese Biscuits

A few weeks ago, my friend Shirley Braden from Gluten-Free Easily posted her recipe for Garlic Cheese Biscuits.

When she shared the link over on Facebook, I commented on how amazing her biscuits looked to which she said:

“Sunny, I’m looking for you to make a grain-free version. I haven’t gotten to that yet, but I know it’s possible.”

Now how could I turn that down?

Only, to make these completely grain-free, I couldn’t use traditional dairy-free cheese options available locally as they all have some form of grain in them.

So I came up with my own.

After much playing, adjusting and perfecting…I believe these garlic-cheese biscuits are something even Shirley’s husband would enjoy. ;)

Paleo Garlic Cheese Biscuits

Ingredients

  • 1 c coconut flour
  • 1 tsp sea salt
  • 1 tsp garlic powder
  • ½ tsp grain-free baking powder (I use this recipe, subbing arrowroot powder for the potato starch).
  • 5 Tbs palm oil
  • 1 c unsweetened coconut milk
  • 3 eggs
  • 1 c shredded dairy-free, paleo friendly cheddar cheese

Instructions

  1. Preheat oven to 425f.
  2. Mix together coconut flour, sea salt, garlic powder and grain-free baking powder. Cut in palm oil with pastry knife or fork until the mix takes on a nice crumble. Mix in coconut milk and eggs. Fold in cheddar cheese.
  3. Scoop mixture by the heaping tablespoon on to parchment lined cookie sheet. Use your hands to bring dough together as needed, but be certain not to press the dough too firmly or else your biscuits will be too dense.
  4. Bake at 425f for 15-20 minutes or until lightly golden.
  5. Makes approximately 20 biscuits.

One Minute Microwave Lava Cake (Grain-Free, Dairy-Free, Refined Sugar-Free)

I love my friends.

I love that anyone who knows me in this little town of ours automatically thinks of me when they see something labeled “gluten-free.”

Because of this, I get periodic recipes e-mailed or texted to me on a regular basis and frankly, many of these turn into inspiration for future recipes or meals.

One of my most popular recipes (both in-house and on my website) is my Molten Lava Cake, so when a friend said she saw a recipe for a minute mug gluten-free lava cake, I was intrigued to say the least.

This recipe from PBS Food is naturally gluten-free but needed some additional tweaking before it was just-right for my grain-free, dairy-free and as refined sugar-free as possible household.

Lucky for me, this week’s Elf4Health challenges include making a mug cake!

What better time to perfect this decadent dessert once and for all? Like an inside-out lava cake, this richly decadent treat is refined sugar-free and high in protein but so sweet no one will ever guess how healthy it really is. With just a 30 second cooking time, you’ll have no trouble making enough to share with your whole family!

One Minute Microwave Lava Cake (Grain-Free, Dairy-Free, Refined Sugar-Free)

Ingredients

  • Adapted from Marc Matsumoto
  • 1 tall ceramic mug
  • 1 tsp coconut oil
  • 1 egg
  • 1 Tbs coconut cream
  • ½ tsp vanilla extract
  • 2 Tbs cocoa powder
  • 2 Tbs Palm Sugar
  • ¼ tsp grain-free baking powder (I use this recipe with arrowroot powder in place of potato starch)

Instructions

  1. Generously grease the bottoms and sides of a tall mug with the coconut oil, set aside.
  2. In a small bowl, beat the egg then whisk in coconut cream and vanilla. Sprinkle in cocoa powder and palm sugar, continually mixing the batter to prevent any clumps. Sprinkle the grain-free baking powder on top and quickly mix together.
  3. Pour batter into prepared mug and firmly tap the mug on a towel-lined countertop to release any air bubbles.
  4. Set your microwave for 30 seconds and closely watch the cake. It’s done when it rises to about double its original height (mine usually takes the full 30 seconds). Cook it too long and you’ll no longer have a rich, velvety cake draped in chocolate sauce, you’ll have a chewy glob.
  5. Serve immediately in the mug or remove immediately onto a separate plate and top with your favorite fruit or whipped coconut cream.
  6. Makes 1 mug

Paleo Green Bean Casserole

Growing up, my stepmother always told me she was a horrible cook.

The thing is, I loved her food.  Simple meals made at home are still homemade meals. Living in the small town that we lived in, there weren’t many opportunities to run and grab take-out or fast food and so that meant that we made our food at home. In hind sight, I am forever grateful to have grown up with that reality.

She was the one who introduced me to green bean casserole. I loved every aspect of this dish. The creamy soup mixed with crisp green beans, rounded out with a crunchy zing made possible by the extra French fried onion rings she mixed in.

Green bean casserole quickly became a staple at our Thanksgiving feast. Even the year we chose to forgo the Turkey in favor of Prime Rib and Crab Legs, we still had to have our green bean casserole.

Years later, when my daughter was diagnosed with her milk allergy finding a way to make this dish safe for her was one of the first things I did.

And so green bean casserole remained a staple at our feasts, milk or no milk.

That is until I was diagnosed with Celiac.

You see, to me the best part of green bean casserole actually comes from the French fried onions.

I know these onions in a can are highly processed.

I know they are loaded with awful ingredients we should probably never eat.

But they taste so good!

Because it has taken me so long to find a way to mimic those French fried onions to their glorious perfection, my family has had to go without.

But you know what?

I did it.

I nailed a method for making fried onions that allows them to look, taste and feel like those horrible onions in the can.

Only, there is nothing bad about these.

Heck, they are even fried in healthy coconut oil.

And aren’t they beautiful?

 

This, my Cream of Mushroom Soup and two pounds of fresh green beans = Paleo Perfection!

Nobody will ever miss the canned stuff.

Paleo Green Bean Casserole (Gluten Free, Grain Free, Diary Free, Nut Free, Vegan)

Ingredients

    Fried Onions
  • 1 large onion, sliced very thin (I prefer red onions, yellow onions will work as well)
  • ¼ c coconut flour
  • ¼ c arrowroot starch
  • 1 tsp salt
  • 1 c coconut milk
  • 1 c coconut oil for frying
  • 2 lbs green beans (fresh or frozen)
  • 2 tbs coconut oil

Instructions

  1. Please note that the cream of mushroom soup can be made up to three days in advance and that the fried onions can be made the night before. I’m all about prepping for holiday meals ahead of time…this dish goes together quickly once those two items are prepared.
  2. In large mixing bowl, mix together coconut flour, arrowroot starch and salt, set aside. Pour coconut milk into separate mixing bowl, set aside. Once sliced, separate layers of onions and dredge each layer first through the coconut milk, then through the flour mixture doing your best to ensure even coverage.
  3. Melt coconut oil in large fry pan over medium heat. It is ready for frying when a small piece of onion is dropped into it and the oil bubbles immediately. Fry flour covered onions in small batches, doing your best to keep each ring separate. Use a slotted metal spoon to remove rings once golden. Allow to cool on paper towel lined plate and store at room temperature until ready to use.
  4. To prepare green beans, melt 2 tbs coconut oil in large stir-fry pan and braise the green beans until cooked through.
  5. Using a 2 quart casserole dish, layer ½ green beans, ½ cream of mushroom soup, ½ fried onions. Finish your casserole by layering the remaining green beans, cream of mushroom soup and fried onions, ensuring that the onions cover the top of the casserole evenly. Bake in 400f oven for 15-20 minutes or until heated through and onions are dark gold, not yet brown.
  6. Makes 10-12 servings.

Vanilla Pumpkin Swirl Cake with Vanilla Palm Sugar Glaze (Grain-Free, Dairy-Free, Refined Sugar-Free, Paleo)

This is not my prettiest cake by any means, and I thought about remaking it in a number of different pans, but my daughter was so thrilled when she saw the final product that I decided if it was good enough for her, then it was good enough for me.

So many of my projects stem from the creative minds of my children.

After I had pressure canned 6 quarts of squash puree, used some of the leftover puree to make some Pumpkin Spice Steamers for the family, my oldest daughter decided that she wanted a pumpkin cake for her birthday.

She made it clear, however, that she did not want just any ole pumpkin cake… Nope, what she asked for was very specifically a vanilla pumpkin swirl cake, “you know, like the chocolate vanilla marble cakes you make, mommy.”

Now how could I resist that?

Despite the lackluster of the cake itself, my family raved over the result.

And my daughter? A genius for conjuring this up in her head.

Free of grains, nuts, dairy and refined sugar, I hope you enjoy this cake as much as we have.

Vanilla Pumpkin Swirl Cake with Vanilla Palm Sugar Glaze (Grain-Free, Dairy-Free, Refined Sugar-Free, Paleo)

Ingredients

    Cake
    Vanilla
  • ½ c Coconut Flour
  • ¼ tsp Baking Soda
  • ¼ tsp Sea Salt
  • 4 Large Eggs
  • 1/3 c coconut oil
  • ½ c Palm Syrup
  • 2 Tbs Vanilla Extract
  • Pumpkin Spice
  • 6 Large Eggs
  • ½ c Palm Syrup
  • ½ c Coconut Oil
  • ½ c Coconut Cream (from a well refrigerated can of whole-fat coconut milk)
  • 1 tsp Vanilla Extract
  • 1 TBS Pumpkin Spice
  • 1 tsp Cinnamon
  • 1 tsp Baking Powder
  • ½ c Coconut Flour
  • ½ c Pumpkin Puree
  • Vanilla Palm Sugar Glaze
  • 1 c Arrowroot Powder
  • 1 c Palm Sugar
  • ¼- ½ c Canned Coconut Milk (full-fat, preferred)
  • 1 tsp Vanilla Extract

Instructions

  1. Preheat oven to 375f.
  2. Grease and flour (using coconut flour) bunt pan, set aside.
  3. Prepare vanilla cake by mixing together coconut flour, baking soda and sea salt. Whisk in eggs, coconut oil, palm syrup and vanilla extract, set aside.
  4. Prepare pumpkin spice cake by mixing together eggs, palm syrup, coconut oil, coconut cream, vanilla, cinnamon and pumpkin spice. Quickly whisk in coconut flour, pumpkin puree and baking powder.
  5. Slowly layer each cake ½ c at a time throughout the bunt pan. Use a knife to gently mix the batter without completely incorporating the mix, creating a marbleized look.
  6. Bake at 375f for 35-40 minutes.
  7. Prepare the glaze by adding arrowroot powder, palm sugar and vanilla extract to your blender. Over low setting, slowly drizzle in coconut milk until the glaze has achieved the desired thickness (I used less than ½ cup but more than ¼ cup to achieve this). Set aside.
  8. Remove cake from oven, invert and allow to cool to room temperature. Pour glaze evenly over the top and serve.
  9. Makes approximately 16 servings.

One day, my husband looked at me lovingly and said those five little words many of us never expect to hear:

“Honey, I miss your salad.”

Yes, my salad.

I guess it had been a few weeks since I had made one of my nutrient-packed salads and my husband had a craving.

Now if only I could get my oldest child to say the same thing…

Funny thing is, my salads are never the same salad twice.  I rarely focus on what specific ingredients to put in my salad and instead focus on color.

As mentioned way back when in my Rainbow Smoothie recipe, more color = more nutrition.

This time of the year, when greens of all sorts are in season, mixing and matching salads is one of my favorite things to do.

To keep my rainbow strong, I always have some home-dried plums, blueberries and other seasonal fruits on hand that can be difficult to find later in the year but are a must-have when it comes to one of these colorful mixes.

So play with your food! Fill your color palette and enjoy all of the nutrition nature has to provide.

Rainbow Salad

Ingredients in this salad can vary by taste.  The goal here is to achieve optimum nutrition and flavor by using as many colors as you can find to include in your salad.  Top with your favorite dressing; make a meal out of it by including eggs and/or lean meat!

Ingredients:

16 oz mixed greens (romaine, spinach, kale, etc)

1 c Mixed Nuts (pistachios, cashews, pecans, sliced almonds, etc)

 

To this, add any combination of the following ingredients:

 

Red: Strawberries, Tomatoes, Radish, Raspberries, Beets, Blood Oranges, Cherries, Pomegranate, Red Apples, Red Bell Peppers

Orange: Carrots, Mangoes, Oranges (Clementine’s are delicious in salad!), Apricots

Yellow: Squash, Yellow Tomatoes, Onions, Yellow Apples, Pineapple

Green: Zucchini, Broccoli Cucumbers, Green Beans, Green Apples, Artichokes, Avocado, Celery

Blue: Blueberries, Elderberries

Purple: Blackberries, Onions, Grapes, Dried Plums, Purple Asparagus, Purple Cabbage, Purple Carrots, Purple Figs, Purple Grapes, Purple Peppers, Raisins

 

Serves 4-6

Ingredient-Challenge Monday: Pumpkin Spice Steamer (Dairy-Free, Refined Sugar-Free)

With cold mornings and a plentiful squash harvest, my mouth has been watering at the thought of pumpkin bread, pumpkin pies and more; but sometimes I just want something warm and sweet that will satisfy my pumpkin craving without taking a lot of time.

This Pumpkin Spice Steamer is a delicious solution to those sugar-laden and dairy-filled drinks popping up at local coffee shops all over. Only, this drink is 100% dairy-free, 100% natural and not an ounce of refined sugar to be found.

While I chose to use the honey gifted me by my friend Shirley Braden from Gluten-Free Easily to sweeten our batch, please know that palm syrup, agave nectar, maple syrup or even stevia alone are all great ways to sweeten this drink.

Because the puree does cause this drink to thicken over time, it is suggested that you drink this shortly after it is made.  If you are not serving a crowd (like I do!), feel free to cut the recipe in half, or even ¼ for you and your love or just an extra large serving on your way out the door!

Pumpkin Spice Steamer (Dairy-Free, Refined Sugar-Free)

Ingredients

  • 4 c Unsweetened Coconut or Almond Milk (homemade is best)
  • 2 cans Full-Fat Coconut Milk
  • 1 c Pumpkin Puree (canned or home roasted)
  • ½ c Honey (Palm Syurp, Maple Syrup, etc)
  • 4 tsp Cinnamon
  • 2 tsp Ginger
  • 1 tsp Allspice
  • 1 tsp Nutmeg
  • Stevia to taste (optional)

Instructions

  1. In large sauce pan or small Dutch-oven, whisk together all ingredients except stevia and slowly heat up over medium-high heat. Once light simmer has started, add in stevia, 5 drops at a time, until ideal sweetness has been achieved. Serve right away.
  2. Makes 8-10 servings

Many naturally gluten-free and dairy-free recipes fit nicely into the paleo lifestyle. Gluten-free vegan foods are welcome, as are gluten-free non-vegan foods.  As long as it is free of gluten and dairy, it is welcome here!

That being said, if there is something (like sugar or peanuts) that can easily be substituted without changing the nature of your recipe…and if you are okay with me throwing my own minor tweaks in when I give your recipe a try, please share! I promise to keep my changes minimal as I aim to taste YOUR recipe, not create my own.

ICM July Winning Recipe: Berry Almond Crunch by Heather, the Gluten-Free Cat and Challenge-Ingredient Announcement!

I can’t believe we haven’t had an Ingredient Challenge Monday since July, but with the Healthy Lunchbox Series overlapping the 2nd Monday in both August and September, missing those months just couldn’t be helped!

That being said, with Bountiful Baskets offering blueberries in bulk this summer, I enjoyed the extra time to review and re-review every recipe offered in July’s Ingredient Challenge Monday.

And boy oh boy were there some great options!

Janet’s Blueberry Salmon Teriyaki Spinach Salad was a definite winner, especially with my fish eater. He may not care for green stuff, but he loves fish and this dish was a great way to get him to eat both! Make certain you use either GF-Tamari Soy Sauce or Coconut Aminos to keep it safe!

Tessa won me over with her Raw Dark Chocolate Mousse, which is Paleo friendly  and really easy to make!

But through the final days of summer, there was one recipe my family requested several times over.

This Berry Almond Crunch from my friend, Heather the Gluten-Free Cat is super simple, lightly sweet and a great alternative to ice cream; when my husband or children insisted something cold and sweet was in order, I was happy to oblige by sharing a bit of this easy dish with them.

What loved most about the July ICM entries was how simple many of them turned out to be. Evidence that the best recipes don’t have to be complicated, we hope you enjoy this dish as much as we have.

Berry Almond Crunch by Heather, the Gluten-Free Cat

Ingredients:

  • 2 c. frozen mixed berries
  • 1/2  c. raw almonds
  • 1 T. honey or agave nectar

Directions:

1.  Place all ingredients in the food processor and pulse until chunks stick together when scooped with a spoon.

2.  Spoon into bowls and enjoy.

Makes 2 snacks or 4 small desserts

With a change of season, the fall harvest well on its way coupled with Halloween right around the corner, winter squash of all shapes and sizes are filling the market.

Among my favorites, of course, are Hubbard Squash, Pumpkin and Kabocha (or green pumpkin).

Recently my Squash Lady introduced me to Australian Butter Squash, which looks like a pumpkin but has a lot more flesh and cooks up without any of the string that pumpkins tend to have.  After canning 6 quarts of squash yesterday, I believe I have found my new favorite pumpkin pie solution.

Grain-Free Spinach Pie

I have mentioned previously about my visit to the Dallas Gluten & Allergen Free Expo in early September and how I had the opportunity to meet some amazing people and learn about some fantastic products.

Among all of the new and exciting items, there were some familiar brands and some familiar faces along with them.

One individual I had the opportunity to speak with was Dick Reed, the founder of Chebe.  In our visit I explained that while the products I have been able to try of theirs were wonderful, I earnestly had no idea that chebe had such a wide selection as the stores in my little town only carry one or two of their items at any given time.  Because I make so much of our food from scratch, and because a majority of the chebe items our town has includes dairy, I suppose I just had never taken the time to dig deeper into their product.

Dick smiled at me kindly and offered to see what he could do about getting me some samples.  Within a week, I was thrilled to receive two big boxes filled with chebe mixes.

First, things I did not realize about chebe:

  1. All but one mix is naturally dairy free (although all of their frozen products do contain milk).
  2. EVERY chebe product is not only gluten-free, they are also soy, potato, yeast, MSG and grain-free.

That’s right…these handy dandy little box mixes are grain-free!

The main ingredient?  Manioc flour, otherwise known as tapioca flour.

To keep our samples dairy-free, I simply left out the optional 1 cup of shredded cheese and used coconut milk in place of water or milk in the basic directions as listed on the box.

My husband raved over the pizza crust, which he says was crunchy on the outside and chewy on the inside (just like the ‘real’ stuff, he says.) Shown here with Diaya cheese, this is as close to take-out my family has had in a long time.

Of all the items I was able to whip up with our chebe mixes though, I do believe this Spinach Pie was at the top of everyone’s favorite’s list.

Because the crust is more of a calzone versus a puff pastry, I hesitate to call these spanakopita, although the taste, texture and feel of the filling is very much in line with its traditional dairy-filled cousin.

Any extra filling you may have is great as a pizza topper, as filling in an omelet or even heated and served with hot vegetable noodles.

May this recipe bring back memories of spinach pockets and fill your belly with all the joy it has brought to ours.

Grain-Free Spinach Pie

Ingredients

    ’Ricotta Cheese’
  • 1 c Raw Almonds, soaked 12-18 hours, peels in tact
  • 1 c Water
  • 1 Tbs Lemon Juice
  • 1 Tbs Olive Oil
  • 1 Tbs Dried Basil
  • 1 tsp Minced Garlic
  • ½ tsp Salt
  • Filling
  • 10 oz Fresh Spinach, chopped
  • ½ c diced onions
  • ½ c fresh parsley, chopped
  • ½ c fresh dill, minced
  • 1 c ‘Ricotta Cheese’
  • 2 eggs
  • Crust
  • 1 box Garlic-Onion Breadstick Mix (http://www.chebe.com/Products/Dry-Mixes/Chebe-Garlic-Onion-Mix.aspx)
  • 2 Tbs Olive Oil
  • 2 Large Eggs
  • ¼ c Coconut Milk

Instructions

  1. Prepare ‘Ricotta Cheese’ the day before you plan to serve your Spinach Pie. After raw almonds have soaked 12-18 hours, rinse and use blender to mix 1c water, lemon juice, olive oil, dried basil, minced garlic and salt. Blend on highest setting until smooth.
  2. Pull cheese cloth or very clean pillow case taught over large bowl, securing with rubber bands. Pour ‘cheese’ mixture over the cloth, cover, refrigerate and allow all liquid to slowly drip off cheese for 6-8 hours or until ready to make spinach filling.
  3. Preheat oven to 375f.
  4. Using a large food processor, mix spinach, onions, parsley, dill, ‘cheese’ and eggs together until well incorporated. Set aside.
  5. Mix together crust per the chebe standard directions on the box. Divide dough into 6 equal pieces. On parchment lined cookie sheet, flatten each ball as thinly as possible, paying attention and filling any holes that may appear.
  6. In the center of each dough ball add approximately 1/8-1/4 c spinach filling. Bring dough edges together and secure around spinach filling.
  7. Bake at 375f for 25-30 minutes or until lightly brown.
  8. Makes 6 servings
